Sweet Potato Fries

So I have heard a lot about sweet potato fries lately and decided to give them a go. I am not adventurous when it comes to food, I could literally eat the same thing every day of the week. I also tend to eat a lot of pasta based foods, I mean pasta is great but its good to get a bit of variety. There is only so much pasta I can eat! 

I decided to give sweet potato fries a go and they're a new favourite! I love how they are nice and fluffy, almost creamy. They just pack a bit more flavour and a better texture than normal potatoes. And they are actually so easy to make. Trust me, if I can make them, you can make them. I once almost made a fire while boiling an egg. Heres how I make mine...

First you need to wash your potatoes, don't want to be eating dirt. I would use about 3 sweet potatoes for 2 people, this depends on what you're eating with them, the size of the potato and of course...how hungry you are! 
Cut your potatoes up into wedges. I usually do quite thin wedges. Be warned though that sweet potatoes are really hard to cut so you'll need a fairly sharp knife. I always end up jamming my knife into the potato and then not being able to get it out again so a thin knife is probably best!

Put all the wedges in a bowl, add some salt and pepper and olive oil. (or any other oil you fancy) If you're trying to keep them healthy then use less oil, but just make sure there's enough oil to coat all of your wedges. I'm quite generous with the oil because I like mine nice and crispy! Then stir everything around to make sure all the wedges are coated. 
Just tip them on to a baking tray and pop into the oven. I put the oven on about 200°C and leave them in for roughly 30-40 minutes. This is long enough for the middle to be fluffy and the outside to be crispy. You might need to leave them in for longer depending on how you want them but make sure to check them often so they don't burn. That would just be tragic. 


Then all thats left to do is serve and enjoy! I love them with BBQ sauce because thats also got a sweetness to it, the two go really well together. I had some earlier with a Quorn steak and both were delish! Definitely worth giving these a try if you haven't already, they're healthier than potatoes and they count towards your 5 a day!

Graze box opening!

Its Monday! Not usually something to be happy about but Monday is graze box day! I specifically chose Monday because its nice to have something, ANYTHING, to look forward to after the weekends over. If you haven't heard of graze its basically a company that sends yummy (and healthy) snacks to your door, sounds pretty good right? You can choose different types of boxes, there's a new breakfast one (which I am keen to try) and you can also choose to have sweet snacks or savory ones, I have the variety box which gives you a bit of everything. They can be delivered when you want, I get mine weekly but you can go for every month or fortnight if that suits you better. The boxes are £3.99 each, including delivery which is pretty good if you ask me!


One thing I really like about Graze boxes is that it encourages me to try new things. Never would I have picked up sour cream and garlic crostini but I'm eating it right now and it is the bees knees (i do not say that enough!). I'm not adventurous at all when it comes to new food and this gives me a way to discover new stuff! The idea was that I was going to have like a snack a day or something but I manage to much through these pretty quick, so that ideas out of the window, you just want to taste it all as soon as it arrives!
 So here's what came in this weeks box:

light poppy and lemon slice and a cup of Assam and Kenyan leaves tea. I had this poppy slice after dinner and its gorgeous! Again if I had a choice I would usually default to choosing some chocolate cake, I don't usually try this king of thing but its so yummy! Cant comment on the tea just yet but I've started drinking green tea lately so I've been looking forward to receiving a tea bag in my graze box!

Sour cream and garlic crostini with cashews. Hands down these were the best of the box! my mouth is just watering thinking about them, I wonder if I can get big bags of these somewhere else...
Zesty lime and red pepper salsa! This was yummy, not my favorite of the box but yummy! I couldn't really taste any lime but i love the little pitta bites.

There was also a box of maple and pecan granola, but i've lost the photo! URGH! You can see a smaller version in the top picture. I haven't tried this yet but I bet it would be lovely with some natural yogurt. 

I'm considering switching to a breakfast box but I love getting these cute little snacks too much! Heres the link to the website to find out more, you get your first box free! If only lush did a box like this, I would be in heaven!

Making lunch!

Today me and the boyfriend made some cheesy rolls, this was quite and achievement after many failed attempts at baking! It's a really simple recipie and you really don't need many ingredients, we already had most of it in the cupboards. All you need is:
Cheese
Self raising flour (200g)
Milk (100ml) - I also found that water works just as good 
Paprika (1tsp)
Butter (50g)

That's it! We also chopped up some onion and added that in with the cheese, it tastes awesome by the way! 

So to make them:
Pre heat oven to 200 degrees

1. Add flour and butter into a bowl and mix together using your hands, then mix in the paprika. We also added in a bit of salt the second time around, it makes a difference so I recommend doing that as well 
2. Add in the milk, or in my case water and mix again. You might need to add a little more but don't make it to wet! 
3. Sprinkle some flour on the surface so the dough doesn't stick, then roll out the dough, it needs to be half a centimetre thick. Mine was a little thinner and I think that worked out a little better! 
4. Once rolled out sprinkle some cheese (don't be shy!) over the top of the dough. Also add in anything else such as onion.
5. Now you need to roll the dough into a sausage shape and cut into peices, they can be as thick or thin as you want, I prefer thinner though!
6. Cook for around 20 minutes, or until golden brown!

And then you're done, the rolls in the picture below were made using half the ingredients so you can make double using this recipie! You can also experiment with different types of cheese and fillings, we're going to do cheese and bacon next!
